A Very Tropical Christmas

This year, Round Hill’s culinary team reimagines Christmas as a celebration of flavor, family and Jamaican warmth. Highlights include Pimento Spice–Brined Roasted Turkey with thyme herb gravy, Carved Leg of Ham with Smoked Marmalade Glaze, Local Roasted Wahoo with Za’atar and lemongrass basmati rice, and a Grilled USDA Tomahawk Steak with truffle whipped potatoes and winter vegetable succotash. The menu also features a chilled seafood station, local cheeses and cured meats, and vegetarian selections such as Vegan Tikka Masala and Organic Vegetable Tart with Blistered Cherry Tomatoes. Dessert brings a festive finale with Warm Eggnog Bread Pudding topped with 21-year-old rum crème anglaise.

New Year’s Eve: Coral & Champagne Dreams

As the year draws to a close, celebrations culminate in Round Hill’s New Year’s Eve Coral & Champagne Dreams gala, an elegant evening inspired by the resort’s oceanfront setting and Jamaica’s vibrant spirit. The evening unfolds amid coral tones, lush island botanicals, and artisanal woven décor by resident craftsman “Strawboss” Richard, bringing warmth and authenticity to the festivities.

Guests will enjoy a multi-course dinner beginning with a Caviar Amuse Bouche served on cassava chips and mini blinis, followed by a Golden Kale Salad with whipped goat cheese and scotch bonnet–sea moss honey. A Champagne Sorbet with Blood Orange offers a sparkling interlude before entrées such as Brut Cuvée Braised Prime Beef Short Ribs with garlic-chive pomme purée or Grilled Ahi Tuna with Daiginjo sake velouté and pickled ginger emulsion. Dessert, the Caribbean Reef Symphony, features coconut-rum bavarois, coral meringue and sea salt caramel pebbles, an elegant homage to the sea.

As midnight approaches, guests gather on the seaside lawn for champagne toasts, fireworks and live music beneath the stars, a timeless Round Hill tradition. With the first sunrise of the year, that festive rhythm carries on as live bands blend Mento and Reggae, filling the beach with laughter and dance.
